Nisachon “Rung” Morgan, co-owner of Saap Restaurant in Randolph, #VT, walks out of the freezer section at Restaurant Depot in Everett, Mass., on Jan. 28. Morgan was born and raised in the Isan region of Thailand and applies her knowledge of her native cuisine to dishes at the restaurant.
